Why do vegetables taste bitter in the summer and sweet in the winter?

someone told me that vegetables (ie. bok choy) are sweet in the winter because it has been hit by frost/snow. is that true?


also, wouldn't vegetables be sweeter in the summer because of more sunlight activating photosynthesis, which produces more glucose?

it may not be ripe.......or......just enough nutrients
